All purpose flour mixture
40% whole grain 60% starch

**1 cup all purpose wheat flour is equal to 140 grams gluten free flour



Whole grain
  • Brown Rice Flour
  • buckwheat flour-distinct nutty flavor
  • corn flour-dry, can be gritty
  • mesquite flour-strong flavor
  • millet flour
  • oat flour
  • quinoa flour-strong flavor (toasting will cut strong flavor 200 degrees for 90 min)
  • sorghum flour
  • sweet potato flour
  • teff flour
  • amaranth four


Starches/White Flours
  • arrowroot flour
  • cornstarch
  • potato flour
  • sweet rice flour
  • tapioca flour
  • white rice flour
Nut Flour-treat as whole grain flour
     nut fours add fats to your dishes and can throw off fat ratios in baked goods
  • Almond flour
  • chestnut flour
  • coconut flour-requires a lot of water
  • hazelnut flour-gritty texture
Bean Flour-treat as whole grain flour
     can taste like beans
  • fava bean flour
  • garbanzo bean flour
  • kinako (roasted soy bean) flour
Tips: 
-rice flours or corn starch for thickening sauces and making roux
-pizza crust 50% starch, 50% whole grain
-rice flours can be gritty and therefore not the best main flour
